**Batch number HD21825 was made using what is called "melters honey." You will notice that this batch is different than our regular batches. The reason we chose to use melters honey was that we wanted to try this type of honey in the recipe to see if we like it better than the regular wildflower honey, we use. Melters honey, described by one of the local apiaries we work with is:
"Before spinning honey out of the honeycomb, the wax cappings that seal the honey into the comb need to be cut or scratched off, so you wind up with lots of honey-logged wax cappings that can yield a good amount of burnt honey when the cappings are finally melted and rendered into beeswax." What you will notice is the consistency and color on this batch is slightly different, and it will taste sweeter. We hope you enjoy this variety but more than likely we will use a combination of the regular honey and the melters honey for future batches. [March 2025]
Unlike any other honey mustard dressing you have had. The mustard comes from a historical mustard mill and the honey is not just clover, its wildflower, and you can actually get floral hints in this sweet and savory dressing. Excellent tossed with a spinach/walnut/dried cranberry salad or drizzled over salmon on the grill. Excellent as a dipping sauce for chicken, veggies, or fish.
Ingredients: *Stone mill mustard (blended whole mustard seeds, vinegar, salt), *wildflower honey, sunflower oil, water, organic red wine vinegar. *Local New England Ingredient.
